For the next 15 weeks, they will participate in culinary skills training, engage in workforce development and gain experience through internship. In this cohort, we are updating the curriculum to provide more hands-on opportunities to learn about food systems, food waste and seasonal food preparation.

Participants to a trip to Swallows Nest Gardens in Council Bluffs, Iowa for a farm tour where they had a true farm to table experience. The participants walked through the fields with one of the farmers, Nancy Crews, and learned about different types of produce and herbs. They harvested four varieties of heirloom tomatoes, two varieties of cucumbers, basil, edible flowers, garlic and garlic butter served  at a picnic table beneath a grove of trees on the farm.

Throughout the course of the program, participants have opportunities to engage with farmers, local restaurateurs and community professionals. This exposure combined with culinary skills prepares them for successful careers making livable wages in the food and beverage industry.
