Education is a core value at No More Empty Pots. In October we partnered with Elders 4 the Earth, a 50 years and older group that engages in activities to learn and take action in positive practices concerning improving the ecosystem and the environment. At their annual retreat, Neva, Project Leader with No More Empty Pots, delivered a cooking demonstration showcasing local, seasonal foods along with tips and tricks on preventing food waste. Hunger and food insecurity is a fast growing issue among seniors.
Many seniors face difficulty in getting access to food, being able to afford enough food or not having the skills, tools or energy to prepare their own meals. Activities like this retreat support seniors in learning to reduce their food insecurity. Neva showed the group how to make two meals; Roasted Butternut Squash Spinach Salad with Goat’s Cheese and an Easy Corn Chowder, Red Pepper and Dill Soup.
