May Harvest of the Month - En garde, it's Asparagus!

Nebraska Harvest of the Month is a flexible, statewide Farm to School program that celebrates Nebraska-grown and raised foods. Featuring over 30 local products, including fruits, vegetables, proteins, and more. The month of May is celebrating Asparagus! Our CSA this week features asparagus from Pekarek's Produce in Dwight, NE distributed through Lone Tree Foods in Lincoln, NE

There’s something special about the arrival of asparagus—it’s one of the first true signs that spring harvests are in full swing. Crisp, vibrant, and full of flavor, asparagus is a seasonal favorite that brings freshness to any meal.

What Makes Asparagus Special?

Asparagus is a perennial vegetable, meaning once it’s planted, it can produce for 15–20 years. That makes it a long-term investment for farmers—and a highly anticipated crop each season. The spears grow quickly (sometimes several inches in a single day!) and are best harvested while young and tender.

You’ll typically find green asparagus, but purple and white varieties exist too. Each has its own subtle flavor differences, though all share that earthy, slightly sweet taste.

Flavor & Nutrition

Asparagus has a clean, grassy flavor with a hint of sweetness. When cooked, it becomes tender while still maintaining a satisfying bite.

It’s also packed with nutrients:

Rich in fiber for digestion
High in folate, important for cell health
Contains vitamins A, C, E, and K
A natural source of antioxidants

It’s a light but nourishing addition to your plate.

Simple Ways to Enjoy Asparagus

Asparagus shines when prepared simply. Here are a few easy ideas:

1. Roasted Asparagus
Toss spears with olive oil, salt, and pepper. Roast at 400°F for 12–15 minutes until tender and slightly crispy. Finish with a squeeze of lemon.

2. Sautéed with Garlic
Cook in a pan with olive oil and fresh garlic for 5–7 minutes. Add a pinch of red pepper flakes for a little heat.

3. Shaved Asparagus Salad
Use a vegetable peeler to create thin ribbons. Toss with lemon juice, olive oil, parmesan, and a pinch of salt for a fresh spring salad.

Storage Tips

To keep asparagus fresh:

Store upright in a jar with about an inch of water (like a bouquet)
Cover loosely with a plastic bag
Keep in the refrigerator

For best flavor and texture, use within 3–5 days.

Fun Fact

Asparagus is part of the lily family—yes, the same family as onions and garlic! And if you’ve ever noticed a distinct smell after eating it, you’re not alone—it’s a harmless and well-known quirk caused by natural compounds in the vegetable.
