Harvest of the Month Reveal and Producer Highlight!

No More Empty Pots proudly participates in the statewide “Harvest of the Month” program, celebrating locally grown and seasonal foods. Each month, we highlight a Nebraska-grown item, encouraging the community to taste, explore, and learn more. This December, we’re featuring potatoes. Join us in celebrating the flavors of Nebraska and the importance of eating local!

PRODUCER HIGHLIGHT: ONE FARM
One Farm, located in Logan, Iowa, is owned and operated by Danelle Myer. After building a career in marketing and the nonprofit sector, Danelle returned to her family’s farm in 2010 to launch One Farm on a single acre of land. Today, she grows a diverse mix of crops each season, including red, yellow, white, and purple potatoes—some of which are featured in No More Empty Pots’ Micro Market.

“One Farm is the compilation of many philosophies and life experiences: a love of nature, outdoor exploration, fulfillment from physical labor, creative and seasonal cooking, sustainable growing practices, family roots, living authentically and food as medicine. It is also the result of access to family farmland – a respected and humbling privilege – and a desire to do something personally meaningful with that access.

What does "One Farm" mean? It means that every little thing matters. And, when we want change, little things become big things through repetition. One step, one new venture, one person, one small brave act can transform your life, your health and your general attitude and well being.”

In addition to farming, Danelle owns One Farm Market, a local foods store in Logan, IA. One Farm is managed using chemical-free methods and growing practices aligned with National Organic Program standards.

Harvest of the Month POTATOES!!!

SELECTION & STORAGE

  • Look for firm potatoes without sprouts.
  • Avoid potatoes with green coloring.
  • Store potatoes in a cool, dark, humid place with good air circulation. 
  • Do not store in refrigerator.

NUTRITION TIPS
Most of the nutrients are contained right below the skin of the potato, so avoid peeling when possible. Potatoes are a good source of vitamin C, fiber, potassium, complex carbohydrates, and antioxidants.

DID YOU KNOW?
• Wild potatoes originated in the Andes mountain range and were first cultivated about 7,000 years ago.
• There are thousands of varieties of potatoes. Potatoes come in different colors including: white, red, russet, yellow, and blue.

Packed Potato Salad 
Ingredients: 
1 bunch of kale (chopped)
1 bunch of broccoli (chopped)
6-8 potatoes depending on size (diced)
6 eggs 
1 red onion (diced)
5-7 stalks of celery (diced)
Garlic to your liking (we used a whole head)

Instructions: Blanch chopped kale and broccoli. Boil potatoes and eggs. Combine all ingredients in large bowl Allow to time for it to chill in refrigerator. Top with pickled veggies (optional) Enjoy


PLANT A POTATO

1. Fill a large pot one-quarter full of potting soil.

2. Find a potato that has started to sprout, and place it on top of the soil. Cover with 3-4" of soil or until the pot is half full. Water lightly.

3. As green shoots appear, cover them with soil and tie them to a stake. Stop watering when flowers appear so the potato does not rot. After 6-8 weeks, the potato plant will finish flowering.

4. Harvest the potatoes by gently pulling the plant out of the pot. Potatoes will be attached to the plant, and some may still be in the pot. Clean, prepare, eat and enjoy!
