Cherry Tomatoes are not only cute but delicious! From salads, to eating them off the vine, this little tomato packs a punch of flavor with a smile. This week's recipe comes from our Community Harvest lead Rachael Bohnenkamp. The recipe was shared with her by a co-worker at her first job written on the back of receipt paper. She never liked tomatoes until she tried this easy bake option of Tilapia, green onions and of course, cherry tomatoes. This recipe has become a staple throughout Rachael's life and she loves that she can share it!
Ingredients
- Tilapia fillets
- Chopped Green Onion
- Cherry Tomatoes, halved,
- Lemon slices,
- olive oil,
- salt and pepper.
Recipe
Chop the green onion and cut the cherry tomatoes in half, mix in a boil with some olive oil, salt and pepper. On a small sheet of tin foil, add a dash of olive oil and the tilapia fillet. Use the mixture of green onion and tomato to put over the fillet. Add lemon slices to the top. Wrap the tin foil around everything. Put in the oven at 400 degrees for 10 to 15 mins. The fish will be flaky and yummy looking when done. Serve as is or over some rice and enjoy!
