Carrots, Asparagus and Mint - Oh My!

This week's Community Harvest CSA featured a wide range of delicious veggies just in time for Spring! Here is a breakdown of the items and how they can be enjoyed! 

Asparagus: Asparagus does well being steamed, grilled, or roasted on its own, or it can be used in stir fries, frittatas, quiches, pasta, grain bowls, or salads. Try pairing it up with lemon, garlic, and  olive oil! 

Baby Kale: Baby kale is more tender and mild than mature kale, so it  can be sautéed lightly or used raw in salads or smoothies, and is ideal in green mixes, soups,  egg dishes, or grain bowls. Combines well with citrus dressings and seeds. 

Carrots: We know they’re great eaten raw, with or without a dip, like ranch or blue cheese, but they are  pretty versatile - roasted, steamed, or juiced! Try them in stir-fries, stews, soups, and salads.  Adds natural sweetness and crunch to dishes! 

Fresh Minty Tea: Brew it into a calming herbal tea, especially after a meal. Other, less obvious  uses include sprinkling it on salads, yogurt dips, fruit bowls, and even cocktails, to add  brightness. Pairs especially well with cucumber, lemon, and peas. 

Dry Light Red Kidney Beans: They can be boiled and  seasoned (after soaking overnight and rinsed), eaten alone as a hearty protein dish, or added  to chili, baked beans, stews, curries, and salads. Great with rice, spices like cumin and paprika,  and with greens like kale. 

Baby Leaf Spring Mix: Use it raw in salads with a light vinaigrette, and it makes a great base for bowls,  sandwiches, and wraps. Pairs well with roasted veggies, beans, nuts, cheese, and fruits. 

Here are a few ideas to try with this week’s CSA offering: 

  • Spring Detox Salad: Baby leaf mix, shredded carrots, chopped asparagus, mint tea leaves,  lemon vinaigrette 
  • Protein-Packed Bowl: Quinoa, baby kale, kidney beans (remember to soak the day ahead),  roasted carrots, tahini dressing 
  • Warm Veggie Medley: Roasted asparagus and carrots with garlic-mint drizzle (fresh chopped  garlic, mint tea, and olive oil) over baby kale 
  • Herby Bean Salad: Kidney beans, mint, diced carrots, baby kale, olive oil, and vinegar
