Cooking with Carrots

Carrots are the perfect crunchy snack or addition to recipes inducing soups, stir fries, or any recipe you seem fit! Carrots are known to be good for their heart health because of their contents of beta-carotene. Carrots are also great for your heart health due to their richness in potassium.

Carrots aren’t only orange, they have purple, black, white, yellow and red varieties as well. 

Here are some tips for cooking with carrots:

  • To preserve the color, steam or roast the carrots instead of boiling them.
  • You can combine carrot juice with oranges and apples for a nutrient-packed, vibrant juice. 
  • You can also use scraps and carrot peals or tops for stock or juice.
  • Carrots pair well with herbs like thyme or rosemary for an aromatic roast.
  • Blanch carrots before roasting them, this will enhance their sweetness and texture.

     

Carrots are scrumptious to snack on plain or add to any dish. Have you ever made carrots their own delicious meal? Check out this recipe for a marinated carrot salad:

Ingredients:

  • 1 pound carrots (peeled)
  • ½ cup onion (diced)
  • ¼ cup parsley (chopped)
  • 1 tablespoon vinegar 
  • 1 tablespoon water 
  • 1 teaspoon sugar 
  • ½ teaspoon salt 
  • Dash of white or black pepper 
  • 2 tablespoons vegetable oil 

Directions: 

  • Rinse your carrots in cold water 
  • Peel carrots and put them in saucepan with water
  • Bring water to a boil, then cook carrots for 20 minutes 
  • Slice carrots into ¼ inch rounds. 
  • Dice onions and chop parsley. Place in a medium size mixing bowl.
  • Make marinade by mixing vinegar, water, sugar, salt, and pepper in a small bowl with a fork. Add oil and continue mixing.
  • Add marinade to vegetables, stirring gently. 
  • Refrigerator for 2 hours to let the flavors marinate 
  • Serve cold!
