Sweet & Spicy Grilled Cantaloupe

If you don’t love raw kale, this salad may still make a believer out of you! By marinating and massaging the kale, the leaves become softer and its flavor becomes more mild.

Ingredients

  • 1 cantaloupe (provided)
  • 1 tablespoon honey
  • smoked paprika to taste
  • sea salt
  • olive oil

Instructions

  • 1 Heat grill to a medium-high heat, about 450 degrees.
  • 2 Cut the cantaloupe in half vertically and scoop out the seeds.
  • 3 Cut each half in half creating 4 wedges.
  • 4 Cut those 4 wedges in half creating 8 wedges. If your cantaloupe is fairly large, you may have to cut wedges in half one more time, creating more wedges.
  • 5 Remove the skin off of each wedge.
  • 6 Brush the cantaloupe with olive oil and season with smoked paprika.
  • 7 Spray grill with cooking oil and place seasoned wedges on grill.
  • 8 Cook for 3-4 minutes on each side. Or until softened with grill marks. Then let sit for 3 minutes.
  • 9 Sprinkle wedges with sea salt and drizzle with honey.
  • 10 Serve and enjoy!
