Sweet Potato & Apple Casserole

Happy Holidays! I like to think of this time of the year as casserole season. So many options and they make for such a great side! For this particular casserole dish it uses a sweet buttery pecan crumble on top, yum. I’m sure you will be going back for seconds.

Ingredients

  • 3 - 4 sweet potatoes, peeled & cubed (provided)
  • 3 apples, cubed (provided)
  • 2 tablespoons lemon juice
  • ½ cup butter
  • 1 teaspoon cinnamon
  • Olive oil
  • ½ cup maple syrup
  • ½ teaspoon ginger
  • ½ cup pecans
  • ½ cup walnuts
  • Salt to taste

Instructions

  • 1 Preheat the oven to 400 degrees F.
  • 2 Prepare sweet potatoes and place on a parchment paper prepared baking sheet.
  • 3 Roast for 25 - 30 minutes.
  • 4 Transfer the sweet potatoes to a casserole dish.
  • 5 Toss apples in lemon juice then add to the sweet potatoes and mix.
  • 6 In a small saucepan combine 6 tablespoons of butter, maple syrup, salt, cinnamon, and ginger.
  • 7 Heat until butter is melted and at a simmer.
  • 8 Pour butter mixture over sweet potatoes and apples.
  • 9 Bake for about 30 minutes.
  • 10 In a mixing bowl, mix pecans and walnuts with some salt and remaining butter.
  • 11 Add this mixture on top of the potatoes and apples and continue to bake for 10-15 minutes.
  • 12 Serve and spoon some glaze at the bottom over each serving!
