Spicy Coleslaw

One of my favorite parts of autumn is taking a trip to the orchard and coming home with some delicious crisp apples. I am thinking about this delightful coleslaw recipe using apples with a spicy jalapeno twist. Did you say sweet and spicy? A great thing about this recipe is that you can add in other items like carrots or use half red cabbage. Make it creamy by using yogurt or mayo in the dressing or even add a crunch with some sliced almonds! Who doesn’t love a crunch?

  • 2 apples, cored and julienned (provided)
  • 4 cups cabbage, shredded (provided)
  • ½ cup chopped scallions
  • 1 jalapenos, seeded and minced (provided)
  • 1 bell pepper, thinly sliced (provided)

  • ½ cup cilantro, chopped
  • 1 ½ teaspoons ground cumin
  • 3 tablespoons olive oil
  • ¼ cup apple cider vinegar
  • ¼ teaspoon celery salt
  • Salt and pepper to taste
  • Pinch of cayenne pepper

  • 1 Prepare the dressing by combining the vinegar, lime juice, cumin, cayenne, celery salt, Whisk well. Set aside or refrigerate.
  • 2 Prepare the slaw. In a large bowl, combine the cabbage, apples, scallions, jalapenos, cilantro, and bell pepper and mix together.
