This recipe is my “go to” for when I have an abundance of root vegetables in my refrigerator! I usually roast 3-5 pounds at a time. It is fast and easy, and saves in an airtight container for 5-7 days in the refrigerator. Perfect leftovers to bring to work for the week! Sometimes I add a teaspoon of dried cumin and/or 4-6 garlic cloves that I sliced very thin and added to the oil before mixing. Try serving it with a side of cottage cheese, a 6oz serving provides about 20 grams of protein!
