Roasted Parmesan Zucchini and Tomatoes

Try a simple dish made of just a few ingredients but is full of flavor. Use the zucchini and cherry tomatoes from your Community Harvest CSA to make this recipe. Make 4 – 6 servings in just 35 minutes!


  • 2 lbs. zucchini, quartered lengthwise and cut in to 3/4 inch pieces
  • 1 lb. of cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 1/2 cup shredded parmesan
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon coarse salt
  • 1/2 teaspoon ground black pepper
  • 1 table spoon of extra virgin olive oil
  • fresh parsley and thyme, roughly chopped for garnish
