Garden Vegetable Stir Fry

One of my go-to weeknight dinners! Easy, quick, and delicious. The best thing about making a stir-fry is that you can combine any vegetables or proteins that you want. Use store bought stir fry sauce or try this homemade sauce with just three ingredients! Serve over bed rice or mix it up and make a ramen stir-fry. Makes 4-6 servings.



  • 1/3 cup + 2 tablespoons soy sauce or tamari
  • 1/4 cup sesame oil
  • 1 tablespoon cornstarch

Stir Fry

  • 2 cups carrots, sliced
  • 4 cups broccoli florets
  • 1 zucchini, cut into 1 inch cubes
  • 1/2 cup fresh garlic, chopped
  • 1 eggplant, chopped
  • 2 cups baby kale, chopped
  • 1 tablespoon olive oil
  • 1 cup onion, cut in half moon slices
  • 2 tablespoons sesame seeds



  • 1 Combine soy sauce, cornstarch, and sesame oil in a jar, lid, and shake well. You can also whisk in a bowl.

Stir Fry

  • 1 Prepare and cut all vegetables.
  • 2 Heat a large wok or frying pan over medium to high heat.
  • 3 Add 1 tablespoon of olive oil.
  • 4 Add in fresh garlic, saving some for the garnish. Saute until fragrant.
  • 5 Add in the broccoli and carrots and saute for 2-3 minutes or until vegetables become tender.
  • 6 Add in the baby kale, onions, zucchini, and eggplant. Continue to saute while stirring often for 4-5 minutes or until vegetables are tender.
  • 7 Add the stir-fry sauce to the veggies as well as the sesame seeds. Saute for another 1-2 minutes or until the sauce thickens slightly.
  • 8 Salt and pepper to taste.
  • 9 Finish with a fresh squeeze of lemon or lime juice.
  • 10 Garnish with chopped green garlic and sesame seeds
