Another simple recipe to make on the weeknights, this dish is packed with nutrient dense produce! The sweet potatoes can easily be roasted for a more robust flavor and texture. Simply wash, scrub, pat dry and dice into 1 inch pieces and roast at 425 degrees for 25-35 minutes, tossing halfway through. Try adding a can of black beans in with the cabbage and garlic for a bit of protein and color, and substituting dried cranberries or cherries for the raisins for some added flavor!

4 Tbs. olive oil, divided

1/4 cup raisins
2 Tbs. toasted pine nuts
