Braised Cabbage & Apples

New Year, New resolution! I, like many people, have decided to try to bring more colorful vegetables and fruit into my diet. Typically the darker the produce, the higher level of antioxidants, and red cabbage is a prime example. Cabbage is in the Brassica family, so it is high in sulfur rich compounds that during growing, can actually fight off many insects, fungi and weeds! There is a lot of research on the health benefits of these compounds-something fun to look into if you have time. This recipe is quick to prepare and saves for up to 5 days in the refrigerator. Try serving it with wild rice and your favorite protein!
