Grilled Corn on the Cob with Chili-Lime Butter and Cotijia Cheese
Grilling corn on the cob is one of the easiest ways to cook my favorite summer vegetable. I stop at farmstands as soon as I see corn available, and I’m sure they get tired of me asking “when will the LOCAL corn be arrive?” It is finally here and it will be the first thing I cook when I open my box on Friday! Much of the early corn at farmstands come from Georgia and is delicious, but nothing beats Nebraska and Iowa sweet corn. I hope you enjoy this recipe this weekend as much as I do!
Ingredients
3 ears corn in their husks (provided)
1/2 cup unsalted butter
1/2 tablespoon chili powder
1/2 teaspoon cayenne pepper
Juice of 1 lime
Salt and pepper
1/2 cup of cotija cheese (or feta cheese)

Heat your grill to medium to high heat. Grill the corn in their husks. When the husks start to blacken (or about 3 minutes on each side), you'll know they're ready!

Mix all of the other ingredients together in a bowl until they are combined well.

Peel back the corn husks and rub the buttery mixture all over. Here's an expert tip: pull back the husks enough that you can still use them as handles to eat your corn!
