Are you a fan of kale? Try this seasonal pesto using kale. This recipe calls for lemon, garlic, parmesan, and pepitas. You can use walnuts or hemp seed instead if pepitats aren’t your thing. Pesto isn’t just for pasta, use it on a sandwich, in a salad, or even on a charcuterie board. Enjoy!
Ingredients
½ cup pepitas
1 garlic clove
¼ cup vegan parmesan, grated, or 1 tablespoon nutritional yeast
Sea salt
Black pepper
2 cups chopped kale (provided)
2 tablespoons lemon juice
½ cup extra virgin olive oil
Instructions
In a blender or food processor, pulse garlic and pepitas until well ground.
Add salt, cheese, and pepper. Pulse again.
Add lemon juice, then kale. Pulse.
Add in olive oil while blending slowly. Blend until smooth.
