Kale, Green Bean, and Broccolini Salad with Tahini
If you don’t love raw kale, this salad may still make a believer out of you! By marinating and massaging the kale, the leaves become softer and its flavor becomes more mild.
Ingredients
Kale Salad
3 large handfuls of kale leaves (provided)
1 bunch broccolini
1 bunch green beans (provided)
3 tablespoons sesame seeds
Tahini Dressing
2 tablespoons tahini
2 tablespoons olive oil
1/2 lemon
1 tablespoon apple cider vinegar
1 tablespoon water
Salt and pepper

The dressing comes first! Add your ingredients to a single bowl and whisk the contents until everything is combined. If it's too runny, add more tahini.

Place your cut kale into a large bowl and pour the dressing over it. Now it's time to massage. Yes, massage your kale! Use your hands to squeeze, toss and rub the leaves into the dressing. The kale will start to wilt which is good!

Pour water into a saucepan then put it over heat until it boils, then pour in your green beans and broccolini until they are tender. Alternatively, you can steam and blanch your veggies. However you prefer! Either way, remember to drain and let cool.

Combine your newly cooked veggies to your kale and dressing, and toss well.
