Jerusalem Artichokes also known as Sunchokes are a root veggie known for being a little nutty and sweet. One of my favorite ways to make them is a simple roast with herbs!
Ingredients
1 pound sunchokes
2-3 tablespoons thyme
1 tablespoon lemon juice
2-3 tablespoons olive oil
2 garlic cloves
Salt and pepper to taste
Instructions
Preheat the oven to 375 degrees F.
Scrub and clean sunchokes, then dry.
In a mixing bowl, combine oil, garlic, lemon juice, thyme, and other seasonings. Stir.
Chop the sunchokes in medium size pieces.
Place sunchokes in the bowl with the oil mixture and coat thoroughly.
Pour sunchokes and oil into a baking dish and place in the oven.
Cook for 40 – 45 minutes.
You can serve these hot or cold. Garnish with some parmesan if you please.
