Vegan Ham & Bean Soup

In the cold months, bean soup is one of the best ways to stay warm! Check out this vegan version of a “Ham” and bean soup! Beans can be a great alternative to meat protein. This recipe is made with Great Northern Beans but you can substitute your favorite beans for a different flavor! 

Ingredients

  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 1 cup portobello mushrooms, sliced
  • 4 oz. green chiles, chopped
  • 3 garlic cloves
  • 3 cups vegetable broth
  • 3 cups water
  • 1 lb. bag Great Northern Beans, dried
  • 15 oz. fire-roasted tomatoes, canned
  • spices (mexican oregano, ground cumin, smoked paprika)

Directions

  1. Chop onions, carrots, and mushrooms.
  2. Saute chopped vegetables until softened in a large pot. Add green chiles and stir well. Stir in broth and water.
  3. Rinse beans and add to the soup, then add the spice packet and stir.
  4. Add tomatoes to the center of the soup & do NOT stir. Place a lid over the pot and cook for 40 minutes or until the beans are tender. Season to taste and serve!
