Watermelon Jerky

  • Watermelon
  • Salt
  • Smoked Salt
  • Chili Lime Seasoning


  • 1 Preheat the oven to 135 degrees F.
  • 2 Wash watermelon, remove the rind.
  • 3 Cut watermelon into long and thin strips.
  • 4 Remove black seeds.
  • 5 Place parchment paper on a baking sheet.
  • 6 Arrange watermelon slices on a baking sheet making sure not to overlap any slices.
  • 7 Season slices to your liking.
  • 8 Bake for 12-18 hours or until the watermelon is dry and crisp.
  • 9 Serve or store in an airtight container for 2-3 months.

  • Water or Seltzer Water


  • 1 Cut watermelon into small cubes.
  • 2 Lay cubes in a single layer on a baking sheet lined with parchment paper.
  • 3 You can also add your watermelon to a blender and pour the puree into an ice cube tray.
  • 4 Place in the freezer.
  • 5 Once frozen, store in a freezer safe bag.
  • 6 When ready to serve, add watermelon ice cubes to your glass and fill with your favorite beverage.

Watermelon Jam


  • 6 cups watermelon, pureed
  • ⅓ cup powdered pectin
  • ½ cup lemon juice
  • 4 cups white sugar or sugar substitute


  • 1 Wash watermelon, cut, and scoop out about 7 cups of watermelon into a blender.
  • 2 Puree the watermelon until you have about 6 cups, pureed. You may need to add more watermelon.
  • 3 Add the pureed watermelon to a pot.
  • 4 Add lemon juice and sugar to the pot.
  • 5 Bring to a boil, stirring frequently so that the bottom doesn’t burn.
  • 6 You will want to make sure that the temperature reaches 220 degrees F.
  • 7 Remove from heat and store in airtight jars.
  • 8 Process jars in a water bath for 10 minutes to preserve jam.
