Sweet Potato, Carrot & Apple Soup

It’s fall y’all! You know what that means? Soups, stews, all the comfort foods. Enjoy this soup recipe that combines sweet potatoes, apples, and ginger! Just the smell will make you feel the warmth from a nice hug. Top off with your favorite herbs or better yet, caramelize that popcorn in your box and find out what a delicious treat your soup can be with a little crunch on top.


  • 2 large sweet potatoes, peeled and cut into 1-inch cubes (provided)
  • 2 large apples, peeled, cored, and cut into ½ inch cubes (provided)
  • 3 carrots, peeled and chopped
  • 3 tablespoons chives, chopped
  • 1 quart of vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2-3 cloves garlic, crushed
  • ¼ cup Maple syrup
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cinnamon
  • 1 teaspoon Cayenne or curry powder
  • 2 tablespoons fresh ginger, minced
  • Sea salt and black pepper to taste


  • 1 In a pot, heat olive oil then add onion and garlic. Saute until translucent.
  • 2 Add apple, sweet potato, carrot, stock, and all spices (including syrup) to the pan. Bring to a boil then let simmer for 20-25 minutes.
  • 3 In batches, once cooled off a little, pour soup into a blender. Pulse carefully, then puree.
  • 4 Continue this until all soup is blended and poured back into the pot.
  • 5 Reheat and serve
  • 6 Top with freshly chopped chives or other herbs.
